Its versatility as an everyday pan makes it ideal for perfectly searing a steak, caramelising onions, or cooking a hearty casserole for the whole family. It's also oven-safe up to 250°C, so you can start your dish on the hob, then move it to the oven to cook it through slowly, keep it warm, or crisp up a crunchy topping.

The key to saut success is slicing or dicing the ingredients so that they're relatively small and will cook quickly, ideally in an even, single layer to maximise browning and ensure that any excess liquid and steam can escape (this is where the vented glass lid comes in handy as it allows you to trap heat and stops liquids from reducing too far).
